KALE YEAH SALAD



One of my favorite salads to make of all time is this one! Why? Because when you have about 10 things to do before you walk out the door in the morning and have a hubby and kid to take care of as well, it makes life so much simpler to have your lunch made the night before!

I find that by the time I get home and I am hungry, I have a healthy light salad already prepared like it is just waiting on me or something! This is so good, and honestly last for about 3-4 days once prepared. The greens are tough, so they won't get soggy!!!! I added a few other ways to change it up too at the bottom!


INGREDIENTS:

1 cup shredded raw brussels sprouts
1 cup shredded kale
1 cup of chopped arugula
1 cup chopped roma tomatoes
½ cup chopped cucumbers
½ cup chopped purple onions
½ cup chopped yellow and red bell peppers
½ cup chopped raw zucchini
½ cup chickpeas
¼ cup topped with feta or goat cheese crumbles


Dressing:
1 part white balsamic vinegar
2 parts olive oil
1/2 cup grated parmesan cheese
Blend in food processor with 1 tablespoon of chopped green onions and teaspoon of fresh or minced garlic


This refrigerates well and won't get soggy because of tough greens!


Pour dressing over and shake in Tupperware then serve.

Other ways to change it up:
* Add grilled chicken or chopped egg for a protein
* OR add strawberries, mandarins and cashews
